Single Ferment Vinegar

I made a version of your vinegar generator and was able to make vinegar directly from grape juice- not wine. I back slopped the juice with 20% vinegar with live culture. My question is, when I ferment into alcohol first, the ferment produces a lot of CO2. There seemed to be very little CO2 produced going directly from fruit juice. Do you know what the additional compounds are in the finished vinegar since CO2 was not released? Also, your book is also excellent. I cannot imagine trying to make good vinegar without it!

The amount of formed CO2 is always the same, but the fermentation speed differs. You have had both types of fermentation at the same time, therefore the alcoholic fermentation runs quite slow and it looks like less CO2 is formed, but the process takes much longer and therefore the total amount of released CO2 will be the same after fermentation has finished.
