Aeration verses Vinegar Generator

The chefs at Noma restaurant in Norway (https://www.youtube.com/watch?v=WImwMC_OasE) have developed a method using aeration to speed up the fermentation process. Is this essentially what your vinegar generator does? Increase contact with oxygen to speed the secondary fermentation? I have purchased your book and am looking forward to reading it this weekend. Thank you for putting together such a complete guide.

Yes, it's true and a well known fact, aeration speeds up the vinegar fermentation. But it has also been proven, a slow fermentation improves the quality of the vinegar, examples are Modena (Italy) and Orleans (France). So, if using our vinegar generator, we advice to perform a slow fermentation, thus without any additional aerating, or rather, without connecting an air pump. But if you nevertheless want to speed up the process, it's possible to connect an air pump like it is used for fish tanks.

Thank you for writing this book- I feel like I've taken an advanced college course on vinegar making! I made my first batch of elderberry vinegar at a little over 7% acid. I wanted to filter but not lose the probiotics, so I used your freeze/thaw method. As a control, I had 1 bottle that was just left on a shelf to settle at room temperature. The bottle that was frozen and thawed twice did settle faster but also stratified. There is a less dense layer at the top, a darker layer in the middle, and a layer of sediment at the bottom. When I smelled both bottles, the one that had not been frozen or thawed smelled like vinegar. But the frozen/thawed sample smelled like acetate or maybe alcohol (it smelled like a doctor's office). Do you know why the 2 samples would smell differently?

Very interesting effect! No, sorry, I have no answer to this. You know this for sure, but acetate / "doctor like" smell indicates a running fermentation, thus it seems the one sample has started again to ferment??? As already said, I've no idea why.
